what about grants and/or scholarships we get throughout the year...how do we claim those, or do we have to?

If they are federal grants, no, scholarships or private grants, yes.

If you go to hrblock.com you can file online for free if you make less than $33,000. It's very helpful in figuring all the different forms out and is much quicker because it will calculate everything for you.
