I dunno about Mexican food but in Southeast Asian food, cilantro helps to kill the potency of fish sauces we use in our dishes.

i hate cilantro. occasionally i can stand it in some salsa, but that's just because the onions/garlic/peppers mask its vile flavor.

get it the FUCK out of my tom kha gai. and everything else. one tiny bit ruins the flavor...
