When I got home on Saturday morning, I tried ro re-create the meal I had at Cafe Brazil a few hours before.

I made an omelette with cheddar, pepper jack and fontina cheese, Anaheim pepper, green onions, think cut bacon, tomatoes, and avocados. I made some hash browns too and sourdough toast.

I was in heaven.

You have make the bacon first, drain the pan, and cook the eggs in the bacon grease. I always like to make a crap load of bacon, and cut up a few pieces, and mix it in with the eggs.
