I know it's a little late, but here's a recipe for a whole meal that isn't that had to make. Sage Chicken with Pancetta Roasted Sweet Potatoes with a Chipotle Marmalade Haricot Vert Amondine Chicken - 1 whole chicken fresh sage leaves pancetta butter lemon juice salt and pepper Loosen the skin on the chicken and spread room temperature butter under it. Be careful not to tear the skin. Cover the body under the skin with pancetta slices putting a sage leaf or two on each slice. Squeeze lemon juice all over the outside of the chicken and salt and pepper it. Cook it at 350 for 1.5 hours making sure you take the temperature to make sure it's done. It should be at least 155-160 when you take the temperature. When it gets there, take it out and let it sit for at least ten minutes. The temp will raise to 165 on it's own. Roasted Sweet potatoes. Sweet Potatoes 1 can chipotle peppers 1 jar Orange Marmalade Salt and pepper Peel and cut the sweet potatoes in 2 in chunks. Put half a jar of the orange marmalade in a bowl and add a finely chopped pepper(I blend mine) until it tastes right. If you want it hotter, add another or some of the adobo sauce it comes packed in. Just remember that you should be able to still taste the orange. Balance is good here. When you have it where you want, coat the sweet potatoes with it. Roast them in the oven at 350 for at least 20 minutes. Test if they are done with a knife or fork. If it goes in smoothly and comes right out, they are done. Haricot Vert Green beans Slivered almonds lemon garlic chicken(or veggie if you have to) stock salt and pepper Take the part of the bean off that has a bit of the stem off. Chop the garlic and saute it and a handful of the almonds in a little oil. Add the beans and lemon juice. Right away add just enough stock to cause it to steam. Maybe a cup. You can use white wine if you want. Salt and pepper next. Take them off as soon as they feel done. If they turn army green, you have over cooked them and they have lost most of the nutrients. These cook pretty quick so you will have to be vigilant. This will take around 5 minutes from start to finish. |

Get some spicy shrimp flavored ramen noodles, throw in some chopped up weenies.. Microwave for 4 minutes, and wala!
