quick, easy and to die for

PENNE PASTA WITH VODKA SAUCE

1/4 lb. diced pancetta (Italian bacon), do not substitute
1/4 c. butter
1/3 c. vodka
1/2 c. freshly grated Parmesan cheese
1 lb. penne pasta
1 1/2 c. heavy cream
1 1/2 c. tomato sauce

Melt the butter in a large frying pan. When the butter foams, add the diced pancetta. When the pancetta browns slightly (takes 2 to 3 minutes), add the vodka and stir.After the alcohol burns off, stir in the tomato sauce and cream (the alcohol only takes a minute or two to burn off).
Stir continuously for 5 - 8 minutes. Place drained pasta into frying pan, add Parmesan cheese, and mix thoroughly for about 2 minutes.
Serves 4 to 6.

This isn't very fancy at all, but it's tastey and cost effective:

County Fair Casserole

1 package of macaroni
1 lb of hamburger
1 cup of onion
salt & pepper
can of cream of whatever ( i usually use celery)
8 oz of cream cheese
one can of english peas drained

cook macaroni to al dente and drain. Cook up meat & onion, drain off fat. stir in soup and simmer for about 10. Add macaroni and remaining stuff. Bake at 350 for 35.


It makes a ton, so I usually freeze half of it.

Whatever you do....mix up horseradish and Boursin cheese. Do it. Goes good on or in anything an everything. Especially on steak.
